4Provolone: The Southern Classic

Provolone is a semi-hard cheese that originated in Southern Italy but is now produced mainly in the northern regions of Lombardy and Veneto.  

Made from cow’s milk, Provolone is aged for a few months to over a year, resulting in a cheese with a smooth, firm texture and a rich, tangy flavor. The two main types are Provolone Dolce, which is mild and slightly sweet, and Provolone Piccante, which is sharper and more robust. Provolone is perfect for melting in sandwiches, pizzas, and casseroles, or enjoyed as part of an antipasto platter.
