Asiago cheese comes in two main varieties: Asiago Pressato, which is young and mild, and Asiago d’Allevo, which is aged and more robust. 

Asiago Pressato is soft and smooth, with a sweet, buttery flavor, while Asiago d’Allevo is firmer, with a nutty, slightly spicy taste that intensifies with age. Produced in the Veneto and Trentino regions, Asiago is a versatile cheese that can be enjoyed on its own, sliced on sandwiches, or grated over pasta and salads.
