Crispy on the outside and tender inside, carciofi alla giudia are another iconic Roman artichoke dish. Originating in Rome’s Jewish Ghetto, the artichokes are flattened and fried whole until golden and crunchy. 

The result is dramatic in both appearance and texture. This dish is especially popular in spring when artichokes are at their peak and is often enjoyed as an appetizer or side.
